This is the recipe from China, normally pickles are famous with the sourness and eat with cold. Today, i have make little changes on this recipe, so that it can be eaten either cold or warm and sour always not our first choice, so this is a non sour version of pickles.
However, it can be kept in the freezer as appetizer, you can enjoy it whenever you feel like it as snack too.
Ingredients:
Peanuts * 120g (soak in water for overnight)
Cucumber * 150g (cut to cube)
Carrot * 100g (cut to cube)
Sesame seeds * little bit (toasted it)
Olive Oil * 1 tbsp
Garlic * 1 clove (dice)
Seasoning:
Black Pepper * to taste
Salt * to taste
Sesame oil * 2 and 1/2 tbsp
Dried Chili Flakes * to taste
How to cook:
- Boil the peanuts in the pot with water until it is soften. (Alternatively, you can cook it at rice cooker too)
- Cook the cucumber and carrot in water with olive oil for 2 minutes. Drained the water off and set aside for the both ingredients
- Mix all the ingredients and seasoning together.
- Finally sprinkles the sesame seeds on top.
