Hu Jiao Bing (Taiwanese Pepper Bun) 胡椒饼
Hújiāo bǐng or Pepper bun 胡椒餅 is a type of baked bun that originated in city of Fuzhou, the capital of China’s Fujian province. It is a street food that has become quite popular in Taiwan and can be found in night markets or mini food stalls throughout Taiwan. The common ingredients are flour, water, and a leavening agent for the outer dough shell, and a meat protein (usually pork or beef) marinated with sugar, soy sauce, white pepper, or black pepper, and scallion for the inside filling.

Hu Jiao Bing (Taiwanese Pepper Bun) 胡椒饼

Ingredients:
- 1 Cup Water
- 2-3/4 Cup All-Purpose Flour
- 2 tsp Active Dry Yeast
- 2 TBsp Sugar
- 1/2 tsp Salt
- 5 TBsp Lard
- 3/4 Cup
- 1 lb Ground Beef
- 1 tsp Chinese 5 spice
- 1 TBsp Sugar
- 3 tsp Finely grounded Black Pepper
- 2 tsp Finely grounded White Pepper
- 1 TBsp Sesame Oil
- 4 TBsp Soy Sauce
- 1/2 Cup Water
- 2 bunches of Spring Onion Chopped
- 1/3 Cup White Sesame Seeds
- 2 TBsp Water
- 1 TBsp Sugar
Instructions:
- Preheat the oven to 400F.
- Mix all the ingredients for the filling together, leaving out the chopped spring onion. Add the water to the filling mixture 1 TBsp at the time until absorbed.
- Mix the filling until the meat becomes sticky. Keep the filling in the fridge until ready to make buns!
