Oriental Braised Chestnut with Chicken

Chestnuts can be eaten as snacks or make it into a dish with chicken or pork. That’s our all time favorite snacks when we watch our tv show or movies at home. It is working like popcorn for most people.

Anyway, today i have made it into a dinner dish with chicken thighs and it is totally oriental is taste by using the basic combination of Chinese condiments such as light soy sauce, dark soy sauce, sesame seeds oil etc

Oriental Braised Chestnut with Chicken


Frozen chestnuts – 100g

Chicken thighs (cubes) – 400g (marinated with pink salt & black pepper for 30 minutes)

Garlic – 3 cloves (mince it)

Thai chilies – 3 pcs (cut into cubes)

Ginger – 3 slices

Green Scallions – 3 stalks (cut into cubes)

Duck fat – 1 tbsp

ShaoXing Cooking Wine – 1 tbsp


Light soy sauce – 2 tbsp

Dark Soy sauce – 1 tbsp

Oyster sauce – 1/2 tbsp

Black pepper – 1 tsp

sesame oil – 1 tsp

water – 2 tbsp

How to make Oriental Braised Chestnut with Chicken

  1. Preheat the cast iron with duck fat
  2. Add in ginger, garlic and thai chilies, stir fry until fragrance
  3. Add in the chicken cubes and stir fry at high heat
  4. Add in the frozen chestnuts, mix well with the chicken cubes
  5. Add in the seasoning mix, mixed evenly with all ingredients
  6. Add in 1 cup of water, braised the chicken at medium heat and cover with lids for 30 minutes or until the chestnuts are soften
  7. Turn to high heat and add in the ShaoXing cooking wines
  8. Turn off the heat and sprinkles the green scallions
  9. Ready to serve!
