Thai Tom Yum Seafood Bowl
Ingredients: Tom Yum paste – 1/2 pack purple onion – 1 pc (chopped finely on 3/4 portion, keep few round onion rings for decoration) egg plant – 1/2 pc (cut into cubes) Mexico zucchini – 2 pcs (cut into cubes) Shrimps – 15 pcs squids – 3 pcs clams – 5-10 pcs (i use those without shells) fresh parsley – 1 stalk (decoration) coconut oil – 2 tbsp fresh lime – 1 pc (juice only)Thai Tom Yum Seafood Bowl Cooking steps:
- Heat up the ceramic pot with coconut oil
- Add in the purple onion, stir fry until soften
- Pan fried the shrimps for 1 minute
- Add in the Tom Yum paste, mixed well with the onion and shrimps
- Add in the egg plants and Mexico zucchini
- Add 1/2 cup of water, turn to high heat and let it boil for 5 mins
- Turn to lower heat and add in the squids and clams
- simmer for 10 minutes, add in the lime juice
- Decorate the bowl with onion rings and parsley
- Ready to serve!
