Cantonese Seafood Crispy Yee Mein
This is a relatively simple version to make the crispy noodle by using the Air Fryer.
I bought the noodle from oriental mart, and make it crispier using the Air Fryer without oil.
Usually, in the restaurant, all these noodles have to deep fry under oil to make it crispy.
With the help of the Air Fryer, you’ve cut out all the hassle of cleaning the kitchen after cooking.
This is the Air Fryer I am using at the moment. Might consider upgrading to a better grade soon.
Cantonese Seafood Crispy Yee Mein
Let’s gather some of the main ingredients:
This portion yield for 2 servings.
1/2 pack of yee mein noodle
Baby Bok Choy/ Choy Sum as you wish
8 pcs assorted Fish balls (cut into slices) – get it from oriental mart
8 pcs shrimps with tailed-on
2 eggs (beats lightly)
Gravy sauce:
2 tbsp light soy sauce
1 tbsp dark soy sauce
1 tbsp sweet soy sauce
1 tbsp Oyster sauce
1/2 tbsp sesame oil
1 tbsp Tapioca flour + 1 tbsp water (mixed)
black pepper to taste
2 cups water
2 tbsp mince garlic
2 tbsp Oil
3 thin slices ginger
Cantonese Seafood Crispy Yee Mein
Steps:
- Crisp the noodle inside the air fryer (270F @ 5 mins). Then set aside.
- Heat up the cast iron with oil, add in the garlic & ginger stir fry until fragrance.
- Add in the shrimps and fish ball slices stir fry until shrimp turning pinkish-red
- Pour in 2 cups of water let it continue boiling
- Add in the sauce (light soy sauce, dark soy sauce, oyster sauce, sweet soy sauce)
- Add in the eggs mixture while the soup is boiling and stir softly to create the egg drops soup texture
- Add in the veggies (bok choy/ Choy Sum)
- Add in the tapioca water to thicken the gravy.
- Add in the sesame oil.
- Pour the gravy on top of the crispy noodle, and ready to serve!
