Fujian Chinese Pancake Snacks 福建芽菜虾米饼 (Veggie and Shrimps)

Okay, my family was originated from Fujian Province, China, Fujian Chinese Pancake Snacks 福建芽菜虾米饼 is the snack that simply delicious and easy to make. Almost every family has its own version, but it is relatively simple in ingredients preparation. But I have added some extra ingredients to have better textures.

Fujian Chinese Pancake Snacks 福建芽菜虾米饼 (Veggie and Shrimps)

Ingredients:

Flour – 1 cup

Water – mix into the flour to get a smooth and thin batter. (About 1 cup)

Beansprouts – 2 cups

Dried Shrimp – 2 tbsp

Green scallions – 2 tbsp (dice it)

black sesame seeds & white sesame seeds – 1 tsp

Black pepper – to taste

Salt – to taste

Lingham’s Hot sauce with garlic – garnish/ dipping sauce

Oil – to grease the cast iron

 

Fujian Chinese Pancake Snacks 福建芽菜虾米饼 (Veggie and Shrimps)

 

  1. Soak dried shrimps in water until soften (about 10 minutes), Keep the water, and set aside.
  2. Prepare a big bowl, add in flour and water (can also use the water that soaks the dried shrimp).
  3. Mix until it becomes a smooth batter.
  4. Add in dried shrimp, beansprouts and green scallion into the batter.

  1. Heat up the cast iron with oil
  2. Scoops the batter and start pan-fried in the heated cast iron.
  3. Flip to another side once you see the batter turned pale. (about 1 minute, depends on the thickness of the batter)

  1. Cook for another 1.5-2 minutes.
  2. Served with Lingham’s Hot sauce, YUM!!!
