Oyster vermicelli 蚵仔麵線 is a kind of noodle soup popular in Taiwan. Its main ingredients are oysters and mee sua (Chinese vermicelli). One of the famous places serving this is in Dihua Street, Dadaocheng, Taipei. A tan-brown variety of vermicelli used for this dish is made primarily with wheat flour and salt and gains its unique color due to a steaming process which caramelizes the sugars in the dough, allowing it to be cooked for longer periods without breaking down

Instructions:

  • In a bowl, add enough water just to submerge the Vermicelli and soak for 30 mins
  • Strain and cut the vermicelli into small pieces
  • Set aside

Blanching the Oysters

  • Coat the Oysters with sweet potato flour
  • Prepare a pot of boiling water and blanch the oysters in the boiling water over medium heat for 10 to 20 sec (depending on size and your desired doneness)
  • Remove the oysters from the boiling water and set aside.
