Nasi Lemak is the most popular dish in Malaysia. There are many side dishes such as peanuts, onion, anchovies, cucumber and sometimes squid and shrimps for a luxury bites! Tonight i had my American version of nasi lemak for my hubby where he said the display looks like restaurant dish and the taste is amazing. However, we do not have chili sambal here so i have it replaced with caramelized onion with spicy thai sauce to have the gravy. If you are in western countries and i guess this is a good choice for you to stop craving towards nasi lemak.
Ingredients:
Rice * 2 cups
Thick coconut milk * 65ml
Water * 1.5 cups
Ginger * 2 slices
Garlic * 3 cloves
Salt * 1 tsp
*** Mix the above ingredients in the rice cooker and this is the way to cook the fragrance nasi lemak (you can add in the fresh pandan leaf – tie it in a knot, to cook together with the rice) due to i do not have pandan leaf here in Florida, this is so hard to find!! so i skip this ingredient from my rice.
Chicken (Drumstick) * 3 pcs
*** Marinated chicken in the seasoning for 8 hours
Turmeric powder * 3 tbsp
light soy sauce * 3 tbsp
Black pepper * little bit
Parsley herbs * little bit
cilantro Herbs * little bit
Side dishes ingredients:
Anchovies * 30g
Cucumber * 100g (Slice it)
Purple onion * 1 pc (slice it)
Chili * 1 pc (dice it)
Dried Chili Flakes * little bit
Water * 3 tbsp
Thai Sweet Chili Sauce * 2 tbsp
Egg * 1 pc (hard boiled egg – Boil it for 8 minutes)
How to cook:
- Heat up the wok with little bit cooking oil and start frying the anchovies till golden color and crispy
- Heat up the wok with little bit of cooking oil and pan fry the chili & onion until soft. Add in the Thai Sweet chili sauce and dried chili flakes. Add the water and boil it until thick gravy
- Pre-heat oven at 350c for 10 minutes, choose the mode ” bake” and insert the chicken drumstick to cook for 30 minutes
- Start combining all the side dishes into the big plate as per photo.
- Decorate the rice with fresh mint herbs on top and Start MAKAN!!
