To have a little taste bud change, I am making a popular dish from Taiwan. This is very authentic Chinese-Fujian Flavor where dark soy sauce is the main ingredient to make the sauce. My ancester was origin from FuJian, one of the state in China Mainland, where there are many food from Taiwan are similar to there because of the geographic location. Since there are full grown of basil in my backyard garden, here comes i make the chicken dish for our dinner tonight.
Ingredient for Sauce:
Dark Soy Sauce – 1 1/2 tbsp
Light soy sauce – 1 tbsp
Sesame oil – 1 tbsp
Japanese Mirin – 1 tsp
Water – 1/2 cup
Ingredients:
Chicken – 600g chicken (cut into cubes with bones)
Avocado Oil – 1 1/2 tbsp
Garlic – 2 cloves (sliced)
Ginger – 4 slices
Green Scallion – Decoration
Black pepper – to taste
Basil – 2 stalks (keep the leafs only)
Rice cooking wine – 2 tbsp
Steps:
- Mix all the ingredient for sauce in a small bowl and set aside
- Heat the wok with avocado oil
- Add the garlic and ginger stir fried until fragrance
- Add in the chicken and stir fried together with the spices
- Add in the sauce, cover the chicken with the lid at high heat
- Pour the rice cooking wine at the side of the lid to mix into the chicken
- Turn to medium heat to cook for 15 minutes (or until the water starts to dry up as per photo)
- Add in the basil and black pepper, stir fry and mix evenly
- Sprinkle some green scallion on top for decoration
- Tada~~ ready to serve!
