Cast Iron Salty Egg Golden Sand Butter Fried Tofu 咸蛋金莎奶油炸豆腐

For Asian cooking, we are familiar in using salted eggs as the cooking ingredients, in terms of adding richer taste to the dishes and reduce the amount of using salt and soy sauce. Salty eggs are made by duck eggs, which are fermented with salts and use widely to match with chicken, even tofu. I bought the salted egg yolks, excluded the egg whites as i only want the fragrance from the yolks and egg white taste more savory than the yolks which is not suitable for today’s dish.

Today i am making this Cast Iron Salty Egg Golden Sand Butter Fried Tofu for dinner, it can be served together with rice or it can be eaten as snack together with beer. With the coating of the salty yolks on the tofu, it looks like the golden sand sprinkled on each cubes, and make it look super glamorous and tempting! Let’s start to make the yummy tofu now!

 

Ingredients for Cast Iron Salty Egg Golden Sand Butter Fried Tofu

Firm Tofu – 2 pcs (cut into cubes)

Curry leaves – 2 stalks

Unsalted Butter –  2 tbsp

Salty egg yolks – 3 pcs (mashed)

Avocado Oil – 1 cup

Sugar – 2 tbsp

Tofu Coating :

Korean Frying powder – 1 1/2 cups

Garlic powder – 1 tbsp

Black pepper – 1/2 tbsp

How to make Cast Iron Salty Egg Golden Sand Butter Fried Tofu

  1. Cut the firm tofu into square cubes about 1 inch
  2. Pad dry the Firm tofu with kitchen towel and set aside
  3. Mix the firm tofu coating together in a bowl and at the meantime heat up  the cast iron with avocado oil
  4. Coated the firm tofu with the coating mix and start frying once the avocado oil is heated
  5. After frying all the firm tofu, drain the excessive oil with a strainer and set a side
  6. Re-heat the cast iron, add in unsalted butter and salty egg yolks mashed
  7. Add in the sugar
  8. Stir fry and mix well the both ingredients until fragrance
  9. Add in the firm tofu to mix well with the fragrance salty egg yolk mashed
  10. Add in the curry leaves
  11. Bon appetite!
