Super Moist Espresso Coffee Chocolate Chips Marble Pound Cake

Baking is always my weakest area, but i am craving for pound cake today, since it is labor day, i decided to brush up some baking skill.. a very simple one haha. It is No skills required, but just blend and fold every ingredients together. The result turned out super moist and yummilicious! Again, it is time for me to put on weight! oh gosh.


Super Moist Espresso Coffee Chocolate Chips Marble Pound Cake


Kerrygold unsalted butter – 175g (soften under room temperature)

Unsweetened Coconut Drink – 175ml

Powdered sugar – 200g

Eggs – 3 pcs

Tiramisu Espresso Powder – 4 tsp (dissolved in 1 tbsp hot water)

All purpose flour – 225g (sieved)

Baking Powder – 1 tsp

Pink salt – 1/4 tsp

  1. Soften the butter and start mixing it together with powdered sugar
  2. Blending it with cake mixer until it turned to pale white color
  3. Add in the egg, one at a time, mixing it at low speed
  4. Add baking powder, pink salt into the all purpose flour and sieve it.
  5. Add the flour into the creamy batter and start folding it slowly
  6. After all the flour has mixed well with the batter, add in the unsweetened coconut Drink
  7. Finally add in the Tiramisu Espresso water
  8. To create the marble texture, i do not fold the tiramisu Espresso water with the batter very evenly
  9. Pre-heat the oven at 350F
  10. I am using a Rectangular mold, estimated size of 8’x5’x1.5′. liner up with parchment paper.
  11. Add in the chocolate chips
  12. Bake it at 350F for 1 hour
  13. Let it completely cool down before cutting it into slices
  14. Enjoy with a cup of hot flower tea to complete your relaxing teatime
